Whole Wheat Christmas Cookies


Every year for Christmas, I try a different recipe and I’m not always convinced by the result. So this time I’ve made up my own recipe from scratch, and I’m quite happy with the taste and texture. I didn’t want to use sugar so I used sweet fruit like banana and date, and added honey instead.

Preparation: 20 minutes

Cook time: 15 minutes

20 cookies

  • 1 cup whole wheat flour
  • 1 cup ground almonds
  • 1/2 cup butter
  • 1 banana
  • 5 dates
  • 3 tablespoons ground flax seeds
  • 2 tablespoons milk
  • 2 tablespoons olive oil
  • 4 tablespoons honey
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1 lemon zest

Pre-heat the oven at 190C/375F

In a big bowl mix the flour, flax seeds, ground almonds, cinnamon, ginger, lemon zest. In a different bowl crush the banana, add the soft butter, olive oil, milk, and the finely chopped dates, and blend until you make a paste. Pour the paste to the big bowl, add the honey and work the mix with your hands, until you make a ball.

Roll the dough with the rolling pin, and shape the cookies.

Display on a oiled baking tray and bake for about 15 minutes.
