Broccoli, Blue Cheese, Caramelised Onion Quiche

I’m starting baking quiches again. I usually make them with peppers and goat cheese, but I fancied a change of cheese and vegetable. To the broccoli and blue cheese, I added honey caramelised onions, to balance the bite of the cheese with some sweet. It works really nicely.

  • 5 eggs
  • 1 cup milk
  • 2 cups whole wheat flour
  • 1/2 cup water
  • 1/2 cup olive oil
  • 2 cups broccoli heads
  • 2 onions
  • 1 tablespoon ground flax seeds (optional)
  • 25 gr. blue cheese
  • 2 teaspoons honey
  • 1 teaspoon balsamic vinegar
  • salt

Prepare the pastry. In a big bowl, mix the flour with the olive oil and water. Make a ball and then let it rest a bit

Slice the onions thinly, fry them in olive oil, first on high heat for a minute and then lower heat as much as possible to a point where the oil is still bubbling. Let them cook slowly for about 15 minutes until golden. Then you can add the vinegar and honey and let caramelise on slow heat for another 10 minutes.

Pre-heat the oven to 400F/200C.

In the meantime, in a bowl beat the eggs well. Add the milk, a bit of salt, and flax seeds.

Roll the pastry with a pin. Rub the oven dish

with oil and lay the pastry on it. Lay the broccoli, cheese and onions.

Pour the egg and milk mix on top.

Bake for 30 minutes. Serve with a green salad.
