Quick And Scrumptious Lemon Sponge

This cake is perfect for a last minute baking impulse. The ingredients are very often in our fridges and cupboards and it takes no time to prepare and bake. The result is a lovely lemon sponge that can be served on its own, for dessert or for tea.

preparation: 15 minutes

baking time: 25-30 minutes

  • 1/2 cup yoghurt
  • 1 and 1/2 cup white flour
  • 1 and 1/3 cup sugar
  • 1 teaspoon vanilla sugar
  • 1/2 cup melted butter
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 lemon
  • 1/4 cup icing sugar

Pre-heat the oven to 190C/375F.

In a big bowl grate the lemon zest and squeeze the lemon. Add the yoghurt, flour, sugar, vanilla sugar, baking powder. Add the eggs one by one and finally add the butter, blend into a homogeneous paste.

Grease your oven dish with butter. Pour the mixture in your dish and bake for 25 to 30 minutes.

Sprinkle the icing sugar on top of the cake when it comes out of the oven. You can also make a lemon icing to cover it if you feel inspired: 300 gr. Philadelphia cream cheese, 1 and 1/2 lemon juice and zest, 2/3 cup icing sugar, in the blender. Cut sponge in half, spread the icing, and apply rest on top of the cake.
