Red Fruit Charlotte


This summer pudding was a big hit in the 80s in France, as it is very easy to make, fresh, fabulous and delicious. Ingredients are easy to find and it seems like a real treat without being heavy.

  • 250 gr. fromage frais
  • 300 gr. red fruits
  • 3 tablespoons vanilla sugar
  • 5 tablespoons brown sugar (depending on taste and fruits)
  • half a pack of lady fingers i.e. 100 gr.

Allow at least 3-4 hours in the fridge before serving.

In a bowl, mix the vanilla sugar with 1 cup of water. Dip the lady fingers in the mix briefly and arrange them in your mold/bowl, to create the dome of the Charlotte. You might have to break some of them to adjust them to the size.

In another bowl mix the fromage frais with the sugar. Put one first layer of fromage frais on the lady fingers, then a layer of fruit, fromage frais again, etc. until you reach an inch from the top of your dish, put another layer of lady fingers to finish, press gently to squeeze all the layers together, and off it goes to the fridge.

Unmold gently and carefully and serve with raspberry coulis.
