Raquel’s Lime Mousse

L’Artichaut loves cooking with guests this week. There are never enough cooks in this kitchen. Now in Portugal, we’re sharing recipes with our friends Raquel and Rodrigo, her boyfriend, is taking fabulous pictures for us.

This dessert Raquel prepared was incredibly simple yet the result was stunning. Highly recommended for the summer!

Serves 4

Preparation: 20 minutes

  • 3 limes
  • 100 gr. condensed milk
  • 400 ml. cream
  • Crushed almonds

Whip the cream and leave it to rest in the freezer for 20 minutes.

Grate the lime zest and juice the lime. Slowly add the juice to the condensed milk. Add this mixture to the whip cream, along with the lime zest and the almonds (keeping a couple of spoonfuls of each for garnish). 

Pour into glasses and cool down in the freezer for an hour.

Sprinkle the rest of the almond and lime zest.
