Delicious crunchy and soft cookies, perfect for teatime!
Baking with a toddler is sometimes mission impossible. However today I needed to make a batch of my favourite cookies, and it felt really good to be back in the baking game and realise that a lot of magic still happens there.
Preparation: 30 minutes
30 small cookies
- 1 & 1/2 cup Scottish porridge oats
- 1 cup ground almonds
- 1 cup whole wheat flour
- 1/2 teaspoon cinnamon
- 2 apples
- 2 eggs
- 2 (generous) tablespoons organic peanut butter
- 75 gr. butter
- 1/2 cup honey
- 1 teaspoon baking powder
Grate the apples.
In a big bowl, mix oats, almonds, flour, baking powder and salt.
Preheat the oven on 200C.
In another bowl, mix soft butter, peanut butter and honey and make a paste.
Add the mixture to the big bowl, break the eggs into it, finally add the apples.
Butter your baking tray very well as the cookies tend to stick. Bake for 15 to 20 minutes until nice and brown.
